When Life Gives you too many Bananas...

The other day I mistakenly ordered too many bananas.... about a dozen too many!  I decided it was a great opportunity to make one of our family's favorite treats - Banana Bread. This time however, I wanted to make a healthier version -  I used no butter and no added sugar.  You will notice there are a few more healthy additions.  It was delicious!  Even my children loved it.   Find the recipe below.


"Too yummy to be healthy" Banana Bread:


-1/2 cup coconut oil

-1/2 cup organic maple syrup

-2 brown eggs

-3 ripe organic bananas

-1 1/4 cups whole wheat flour

-1/2 cup ground flaxseed

-3/4 tsp baking soda

-1/2 cup chopped walnuts



Preheat oven to 375 degrees.  In blender, cream coconut oil and maple syrup.  Add eggs, one at a time.  Add bananas.

In large mixing bowl, combine dry ingredients, holding back walnuts.  Add banana mixture, then walnuts.   Pour into loaf pan, greased with coconut oil.  Bake for 40-45 minutes.  Let cool for an hour before slicing.
